Over the past weekend we celebrated Rob's 38th Birthday. Tradition in our home is that if it is your special day you get to choose the meal for the day and your choice of birthday cake. This year Rob wanted something a little more traditional, something that reflected our heritage. He chose a simple Melktert. I of course had to change it up a little and turn something as easy as a simple tart and make it look like a cake. It was after all his birthday and birthdays call for cake!
Traditional Afrikaner Melktert
Pasty Ingredients- 200g butter
- 500ml flour
- 125ml sugar
- 10ml baking powder
- 1 egg
- a pinch of salt
- Preheat oven to 180 degrees Celsius
- Cream butter and sugar
- Add egg and beat well
- Add sifted flour and baking powder
- Knead to a stiff dough
- Press into 2 or 3 large tin foil pie plates
- Bake for 20-25 minutes
- 1 litre milk
- 1 cup sugar
- 3 eggs
- pinch of salt
- 1 tablespoon butter
- 2 tablespoons maizena or cornflour
- 5ml vanilla
- Bring milk to a boil
- In a seperate bowl beat eggs add maizena and sugar
- Slowly add egg mixture to the hot milk being careful not to let it curdle
- Add butter and vanilla and cook custard stiring continously for 10-15 minutes or until cooked.
- Pour into cooked pie shells and sprinkle with cinnamon.
